The word "migas" means "crumbs" in Spanish, and in this context, it refers to the use of crispy tortilla strips mixed with scrambled eggs and a medley of fresh ingredients. This dish is beloved for its perfect balance of textures—soft eggs, crunchy tortillas, and juicy vegetables—making it an ideal way to start the day.












Breakfast Migas Recipe

Ingredients

  • 6 large eggs

  • 1 jalapeño pepper, finely chopped (remove seeds for less heat)

  • 1 small onion, diced

  • 1 cup corn chips, lightly crushed

  • 2 tablespoons olive oil

  • 4 small corn tortillas

  • 1 cup refried beans (warmed)

  • 1 lime, cut into wedges

  • Salt and pepper, to taste


Method

  1. Prep the Tortillas:

  2. Cut the corn tortillas into small strips or triangles. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the tortilla pieces and cook, stirring frequently, until crisp and golden (about 3-4 minutes). Remove and set aside on a paper-towel-lined plate.

  3. Sauté Vegetables:

  4. Add the remaining olive oil to the skillet. Sauté the diced onion and jalapeño pepper over medium heat until soft and fragrant, about 3-5 minutes.

  5. Scramble the Eggs:

  6. In a bowl, whisk the eggs with a pinch of salt and pepper. Pour eggs into the skillet with the vegetables. Let the eggs set slightly, then gently stir and fold with a spatula to scramble.

  7. Add Chips and Tortillas:

  8. Once the eggs are about halfway cooked, add the crisped tortilla pieces and crushed corn chips. Stir gently to combine, allowing the chips to soak up some egg but still retain a little crunch.

  9. Finish Cooking:

  10. Continue cooking until eggs are just set but still moist. Taste and adjust seasoning if needed.

  11. Serve:

  12. Spread a layer of warm refried beans onto each plate. Pile the migas on top of the beans. Serve with lime wedges for squeezing over the top.
