Toasted Pumpkin Seed Dip
Ingredients
1 cup pumpkin seeds (pepitas), toasted
1 can cannellini beans, drained and rinsed
1 clove garlic
2 tablespoons of olive oil
2 tablespoons lemon or lime juice
1/4 cup of water, plus more as needed
1/2 teaspoon salt
2 tablespoons of nutritional yeast
1/4 teaspoon cumin
1 small jalapeño or a pinch of chili flakes
Method
Toast the pumpkin seeds in a dry skillet over medium heat for 3 to 5 minutes, until fragrant.
Add the toasted pumpkin seeds, cannellini beans, garlic, olive oil, lemon or lime juice, water, salt, nutritional yeast, and any optional spices to a blender or food processor.
Blend until smooth and creamy.
Add a little more water, one tablespoon at a time, if needed to reach your preferred consistency.
Taste and adjust the salt, citrus juice, or spice level as desired.
Serve with tortilla chips, crackers, or fresh vegetables, or use as a spread for sandwiches and wraps.
Store in an airtight container in the refrigerator for up to 2 weeks
