Toasted Pumpkin Seed Dip is a creamy, savory dip made from roasted pumpkin seeds blended until smooth with ingredients like garlic, citrus juice, olive oil, and spices. It has a rich, nutty flavor with a slightly earthy taste, and it works well as a spread, appetizer dip, or sauce for vegetables, crackers, and warm bread


















Toasted Pumpkin Seed Dip

Ingredients

  • 1 cup pumpkin seeds (pepitas), toasted

  • 1 can cannellini beans, drained and rinsed

  • 1 clove garlic

  • 2 tablespoons of olive oil

  • 2 tablespoons lemon or lime juice

  • 1/4 cup of water, plus more as needed

  • 1/2 teaspoon salt

  • 2 tablespoons of nutritional yeast

  • 1/4 teaspoon cumin

  • 1 small jalapeño or a pinch of chili flakes


Method

  1. Toast the pumpkin seeds in a dry skillet over medium heat for 3 to 5 minutes, until fragrant.

  2. Add the toasted pumpkin seeds, cannellini beans, garlic, olive oil, lemon or lime juice, water, salt, nutritional yeast, and any optional spices to a blender or food processor.

  3. Blend until smooth and creamy.

  4. Add a little more water, one tablespoon at a time, if needed to reach your preferred consistency.

  5. Taste and adjust the salt, citrus juice, or spice level as desired.

  6. Serve with tortilla chips, crackers, or fresh vegetables, or use as a spread for sandwiches and wraps.


Store in an airtight container in the refrigerator for up to 2 weeks
