Welsh Rarebit

Ingredients

  • 2 Tablespoons butter

  • 2 Tablespoon flour

  • 1 teaspoon Dijon mustard

  • 1 teaspoon Worcestershire sauce

  • ½ cup Porter style beer

  • ¾ cup heavy cream

  • 6 ounces shredded cheddar cheese

  • 4 slices toasted breaded

  • Hot sauce to taste

  • Salt and pepper to taste


Method

  • In a small saucepan over low heat, melt the butter and whisk in the flour

  • Continue to whisk the flour for about 2 minutes, do not brown

  • Whisk in mustard, Worcestershire, salt, and pepper until smooth

  • Add beer and whisk to combine

  • Pour in the heavy cream and whisk until well combined and smooth

  • Slowly add the cheese, whisking the whole time so the cheese melts and the sauce is smooth

  • Add hot sauce

  • Pour over toast points and serve immediately while hot
