Enjoy this recipe for an avocado quesadilla filled with creamy avocados and melted cheese, all in a crispy tortilla, and served with chunky salsa. Perfect for a light snack







Avocado Quesadilla

Ingredients

  • 1 Tomato

  • 3 Flour Tortillas

  • 2 Avocados

  • 1 cup Cheddar Cheese

  • 5 tablespoons of oil


Method

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocados with a fork until smooth.

  2. Dice the tomato and mix it into the mashed avocado—season with salt and pepper to taste.

  3. Heat 2 tablespoons of oil in a large skillet over medium heat.

  4. Place one tortilla in the skillet, and sprinkle about a third of the cheddar cheese evenly over the tortilla.

  5. Spread a portion of the avocado-tomato mixture on top of the cheese, and then add another layer of cheese before placing another tortilla on top.

  6. Cook for 3-4 minutes, until the bottom tortilla is golden brown and the cheese has started to melt.

  7. Carefully flip the quesadilla using a spatula, adding another tablespoon of oil if needed. Cook for an additional 3-4 minutes, until the second side is golden and the cheese is fully melted.

  8. Remove the finished quesadilla and place it on a cutting board. Repeat the process with the remaining tortillas and filling, adding more oil as necessary.

  9. Cut the quesadillas into wedges and serve warm. Enjoy with your favorite salsa or guacamole on the side!
