Bacon Jam

Bacon jam is a spread made from cooked bacon, onions, and spices. It's excellent on burgers, sandwiches, and toast.
Bacon Jam
Ingredients
1 pound of bacon
2 cups onions, diced
2 tablespoons fresh garlic, minced
½ cup brandy
½ cup apple cider vinegar
½ cup packed brown sugar
2 tablespoons honey
1 teaspoon Dijon mustard
Method
In a large skillet over medium heat, cook the bacon until crispy. Remove it from the skillet and let it drain on paper towels—reserve about 2 tablespoons of the bacon grease in the skillet.
In the same skillet with the reserved bacon grease, add the diced onions. Cook for about 10 minutes until they are softened and starting to caramelize. Stir in the minced garlic and cook for another minute, until fragrant.
Carefully pour in the brandy to deglaze the pan, scraping up any brown bits left from the bacon and onions. Allow it to simmer for a couple of minutes until the brandy is mostly evaporated.
Stir in the apple cider vinegar, brown sugar, honey, and Dijon mustard. Chop the reserved bacon into small pieces and add it back to the skillet. Mix everything well.
Reduce the heat to low and let the mixture simmer for about 30-40 minutes, stirring occasionally, until it thickens and becomes jam-like
For a smoother texture, you can use an immersion blender to blend the mixture to your desired consistency. If you prefer it chunky, you can skip this step.
Allow the bacon jam to cool completely, then transfer it to a clean jar or an airtight container. It can be stored in the refrigerator for up to two weeks.
