Caramelized onion hummus is a smooth and creamy take on traditional hummus. It combines blended chickpeas, tahini, and olive oil with sweet, caramelized onions.
Caramelized Onion Hummus
Ingredients
One can (15 oz) of rinsed and drained chickpeas.
1/4 cup tahini
1/4 cup of water or as needed
2 Tablespoons of olive oil
2 Tablespoons fresh lemon juice
One teaspoon ground cumin
Salt, to taste
1/2 cup caramelized onions
Optional toppings: Toasted pine nuts, finely chopped fresh parsley, or a drizzle of high-quality olive oil
Method
Start by slicing 2-3 medium onions thinly. Heat one Tablespoon of olive oil in a large skillet over medium heat.
Add the sliced onions with a pinch of salt to pull out their moisture. Cook them low and slow for about 20-30 minutes, stirring occasionally until they reach a beautifully soft, golden-brown, and caramelized state. If they start to stick, splash in a bit of water to deglaze the pan.
In a food processor, combine your rinsed chickpeas, tahini, 1/4 cup of water, two tablespoons of olive oil, fresh lemon juice, ground cumin, and a pinch of salt.
Pulse a few times, then blend continuously until your mixture is irresistibly smooth and creamy. Scrape the sides of the bowl for an even texture. Adjust the water to achieve your desired consistency.
Once your hummus is perfectly smooth, add the caramelized onions and blend again until they meld seamlessly into the mix.
Taste your hummus and make any necessary adjustments. A touch more salt, lemon juice, or sweetness can fine-tune the flavors to your preference.
Pair it with warm pita bread, crispy crackers, or an array of vibrant vegetable sticks for a visually appealing and mouthwatering dipping experience.
