A Croque Madame Sandwich is a French dish consisting of toasted bread, ham, and Gruyère cheese, topped with a fried or poached egg. It's often served with a side salad or fruit








Croque Madame Sandwich

Ingredients

  • 2 Tablespoons butter

  • 2 Tablespoons flour

  • 1 ¼ cup milk

  • ½ teaspoon chicken

  • 4 slices of bread

  • 4 slices of cheese

  • 4 slices of ham

  • 2 eggs

  • Salt & pepper to taste


Method

  1. In a small saucepan over medium heat, melt the butter

  2. Add the flour to the melted butter and whisk to make a roux

  3. Add the milk to the roux and stir until the sauce begins to thicken.

  4. Add the chicken base and season with salt and pepper to taste. Set aside

  5. Butter one side of each of the bread slices and place them buttered side down in a skillet or large frying pan that has been warmed up over medium heat

  6. Add a slice of cheese to each piece of bread in the pan, and top with slices of ham (Note-If your pan is small and you cannot make two sandwiches, you can make one sandwich and repeat the process)

  7. When the bread gets golden brown on the grilled side and the cheese has melted, place the bread together to make a sandwich, and then set aside off the heat, still on the pan, to stay warm.

  8. In a small pan, make sunny-side-up eggs

  9. Place one egg on each sandwich and cover with the sauce
