A falafel burger is a flavorful vegetarian alternative to traditional beef or chicken burgers. The patty is made primarily from ground chickpeas or fava beans, which are spiced with herbs such as parsley, cilantro, and garlic, then seasoned with cumin, coriander, and other spices. These ingredients are blended together, formed into a patty shape, and typically pan-fried or baked until the outside is crisp and golden while the inside remains tender and moist.

Ingredients

  • 3 cups cooked chickpeas

  • 2 cups cooked brown rice

  • ¼ cup vegetable broth

  • ¼ cup chopped fresh parsley

  • 1 ½ Tablespoons lemon juice

  • 2 teaspoons dehydrated garlic

  • 2 teaspoons dehydrated onion

  • 2 teaspoons red pepper flakes

  • 2 teaspoons mustard powder

  • 2 teaspoons paprika

  • 1 teaspoon ground coriander

  • ¼ teaspoon ground black pepper

  • Whole wheat buns

  • Toppings of your choice

Method

  1. Preheat oven to 425 degrees F

  2. Line a baking sheet with parchment paper

  3. Combine chickpeas, rice, broth, parsley, lemon juice, garlic, onion powder, coriander, red pepper flakes, mustard, paprika, and pepper in a food processor or blender. Mix on low for about 45 seconds. Do not overmix the hummus. Stop and scrape the sides to get everything mixed evenly.

  4. Spoon out ½ cup of the chickpea mixture and form into a patty. Place the patty on the baking sheet. Repeat until all the mixture is used.

  5. Bake for 15 minutes. Flip the patties, cook for an additional 15 minutes, and serve on the buns with your favorite toppings.
