Fresh Tomato Salsa

· 4 pounds medium tomatoes

· 2 fresh jalapenos

· 2 small onions-peeled

· 1 large bunch cilantro

· 4 garlic cloves- peeled

· 1/2 Tablespoon kosher salt and pepper mix

· 1 Tablespoon fresh lime juice


  1. Wash all produce

  2. Peel the garlic and shallot, slice and de-seed the jalapeno. Take any stems off the tomatoes.

  3. Add everything but the lime juice and salt and pepper to a food processor and blend until everything is evenly amalgamated.

  4. Add the salt, pepper and lime juice to the mixture and pulse quickly 4 times to incorporate

  5. Store covered in the refrigerator for up to one week

Yield 1 gallon
