Fresh Tomato Salsa
Ingredients
4 pounds of medium tomatoes
2 fresh jalapenos
2 small onions-peeled
1 large bunch of cilantro
4 garlic cloves- peeled
1/2 Tablespoon kosher salt and pepper mix
1 Tablespoon fresh lime juice
Method
Wash all produce
Peel the garlic and shallot, and slice and de-seed the jalapeno. Take any stems off the tomatoes.
Add everything but the lime juice, salt, and pepper to a food processor and blend until everything is evenly amalgamated.
Add the salt, pepper, and lime juice to the mixture and pulse quickly four times to incorporate.
Store covered in the refrigerator for up to one week.
