Green olive tapenade is a Mediterranean spread made from green olives blended with capers, garlic, lemon juice, and olive oil. It's savory, tangy, and often served as an appetizer on bread or as a topping for meats and fish.

Green Olive Tapenade

Ingredients

  • 1 cup pitted green olives

  • 2 tbsp capers

  • 2 anchovy fillets (optional)

  • 1 garlic clove

  • 2 tbsp fresh parsley

  • 1 tbsp lemon juice

  • 1/4 cup olive oil

  • Black pepper, to taste


Method

  1. Add olives, capers, anchovies, garlic, and parsley to a food processor. Pulse until roughly chopped.

  2. Mix in lemon juice, then slowly add olive oil and blend to desired texture.

  3. Season with pepper. Serve on bread or as a dip.
