Green olive tapenade is a Mediterranean spread made from green olives blended with capers, garlic, lemon juice, and olive oil. It's savory, tangy, and often served as an appetizer on bread or as a topping for meats and fish.
Green Olive Tapenade
Ingredients
1 cup pitted green olives
2 tbsp capers
2 anchovy fillets (optional)
1 garlic clove
2 tbsp fresh parsley
1 tbsp lemon juice
1/4 cup olive oil
Black pepper, to taste
Method
Add olives, capers, anchovies, garlic, and parsley to a food processor. Pulse until roughly chopped.
Mix in lemon juice, then slowly add olive oil and blend to desired texture.
Season with pepper. Serve on bread or as a dip.
