Ham and Asparagus Quiche

This ham, asparagus, and parmesan quiche is easy and delicious. The flaky crust contains eggs, milk, cheese, ham, and asparagus. Serve it for any meal.




Ham and Asparagus Quiche

Ingredients

  • 2 tablespoons extra-virgin olive oil

  • ½ red onion, diced

  • 1-pound fresh asparagus, chopped

  • 1 cup ham, medium dice

  • 1 tablespoon garlic, minced

  • 8 large eggs

  • ½ cup heavy cream

  • 2 Tablespoons stone-ground mustard

  • ½ teaspoon each of kosher salt and black pepper

  • 1 cup shredded Parmesan cheese

  • Juice from 1 lemon

  • 2 pre-made pie crusts


Method

  1. Preheat oven to 375°F. Heat a large nonstick skillet over medium heat. Add oil, and swirl to coat. Add the onion; cook, stirring often, until it becomes translucent. Increase heat to medium-high and add asparagus; cook, stirring often, until the asparagus is tender. Add ham and garlic, mustard, and lemon juice. Stir until the ham is lightly browned and the garlic is fragrant. Turn down the heat, let the pan simmer, and reduce the liquid.

  2. Whisk eggs, milk, cream, pepper, and salt in a medium bowl. Add the asparagus and ham mixture into the pie shells. Add the egg mixture evenly between the pie shells to cover the ham and asparagus. Place on a cookie sheet and bake until set and golden brown, about 30-35 minutes. Let stand for 10 minutes before slicing.
