Liver and Onions

Ingredients

  • 2 Tablespoons vegetable oil

  • 2 yellow onions, julienned

  • 1 cup all-purpose flour

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 6-ounce skinned and deveined beef liver slices

  • 2 Tablespoons vegetable oil for the liver

Method

  1. Add the first 2 Tablespoons of oil to a large skillet, and heat over medium-high heat

  2. Add the onions and stir for about 10 minutes, until they become soft and somewhat caramelized-remove from the pan

  3. In a large bowl, add the flour, salt, and pepper, and mix well

  4. Dredge the pieces of liver in the flour and heat the second 2 Tablespoons of oil in the same skillet over medium-high heat

  5. Add the flour-covered liver to the skillet and cook on one side until blood forms on the top of the liver

  6. Flip with a spatula and cook until blood starts seeping out of the other side. Turn the heat to low and add the onions on top of the liver, cover the pan and let simmer for 5 minutes

Serve hot with a baked potato and vegetables
