Pineapple Salsa
Ingredients
1½ cups fresh or canned pineapple chunks
2 tomatoes, diced
1 small red onion, finely chopped
½ red pepper, diced
1 bunch cilantro, chopped
1 lime (juice and zest)
Method
Chop all ingredients into small, even pieces.
Combine pineapple, tomatoes, red onion, red pepper, and cilantro in a bowl.
Add lime zest and juice. Toss everything well.
Season with salt to taste. Optional: add pepper or a pinch of chili for heat.
Chill for 30 minutes to let flavors blend. Serve with chips, grilled meats, or as a taco topping.
