Roasted Beet Grain Bowl
Ingredients
Fresh beets (about 4-6 medium-sized)
Olive oil (2-3 tablespoons)
Salt and Pepper to taste
Optional: fresh herbs
Method
Preheat your oven to 400°F (200°C).
Start by washing the beets thoroughly to remove dirt and debris.
Cut off the greens and roots, leaving about an inch of the stems to prevent bleeding.
Cut the beets into uniform sizes, about 1-inch cubes or wedges.
Place the beets in a large bowl and toss with olive oil, salt, and pepper.
Spread the seasoned beets on a baking sheet lined with parchment paper for easy cleanup.
Roast in the oven for 30-40 minutes, or until fork tender. You may want to stir them or turn halfway through for even cooking.
Remove them from the oven and let them cool slightly.
Serve with your favorite grains as a base, and top with sweet balsamic dressing and crumbled goat cheese.
