Ingredients
2 slices bread
2 eggs
2 tbsp peanut butter
1–2 tsp sambal oelek
Butter or oil, for frying
Salt and pepper
Optional: scallions, cilantro, sesame seeds, lime
Method
Toast the bread until golden and crisp.
Mix peanut butter with sambal oelek in a small bowl.
