Stir Fry Scallops


  • 1 pound large scallops

  • salt and pepper

  • 1 cup broccoli florets

  • 1 cup carrots, sliced

  • 1 cup peppers, chopped

  • 1 teaspoon fresh garlic, minced

  • 1 teaspoon fresh ginger, minced

  • 2 Tablespoons red curry paste

  • 2-3 Tablespoons soy sauce

  • 1-2 Tablespoon olive oil

  • ¼ cup water


  1. Heat a skillet or wok over medium heat and add the oil

  2. Pat the scallops dry and season with salt and pepper

  3. Add the scallops to the pan and sear on each side until golden brown

  4. Remove the seared scallops from the pan

  5. Deglaze the pan with some soy sauce

  6. Add some more oil and the carrots into the pan to start cooking, about 2 minutes

  7. Add the broccoli and the peppers, and stir fry for about 2 minutes

  8. Add the garlic and ginger and stir well

  9. Add the curry paste and the water, stir well to break up the paste to make a sauce

  10. Add the scallops back into the pan in the sauce and simmer for about 10 minutes, flipping the scallops at about the 5-minute mark

  11. Serve with rice or noodles
