Strawberry, Tomato, and Nectarine Bruschetta with Goat Cheese.

Ingredients

  • 1 cup strawberries

  • 1 cup cherry or grape tomatoes

  • 1 shallot

  • 1 nectarine, diced

  • 8 oz. plain goat cheese

  • ½ cup olive oil

  • ½ cup balsamic vinegar

  • 1 teaspoon sugar

  • 2 sprigs fresh basil

  • ½ loaf of French bread

  • Salt and pepper to taste

Method

  1. Preheat the oven to 375°F.

  2. Slice the French bread into ½-inch thick slices and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 10-15 minutes or until lightly toasted.

  3. While the bread is toasting, prepare the topping. Dice the strawberries, tomatoes, and nectarine into small pieces and finely chop the shallot.

  4. In a small bowl, whisk together the balsamic vinegar, olive oil, sugar, and salt and pepper to taste.

  5. In another bowl, mix the diced strawberries, tomatoes, nectarine, and shallots. Add the balsamic dressing and toss to combine.

  6. Spread a generous amount of goat cheese on each slice of toasted bread.

  7. Top each slice with a spoonful of the strawberry-tomato-nectarine mixture.

Garnish with fresh basil leaves.
