Sweet Potatoes Roasted in Coconut Oil

Tender sweet potatoes are tossed in rich coconut oil and roasted until golden and caramelized, creating a subtly sweet and aromatic side dish that pairs beautifully with any meal.
Sweet Potatoes Roasted in Coconut Oil
Ingredients
2 sweet potatoes
3 small sweet peppers
5 green onions
3 garlic cloves
1 tablespoon finely minced ginger
¼ cup coconut oil
Salt and pepper, to taste
Method
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Peel (optional) and chop sweet potatoes into 1-inch cubes. Slice peppers, chop green onions, mince garlic and ginger.
In a large bowl, toss all vegetables with melted coconut oil, salt, and pepper until evenly coated.
Spread in a single layer on the baking sheet.
Roast for 20 minutes, stir, then roast another 15–20 minutes until potatoes are tender and edges are golden.
Garnish with extra green onions if desired. Serve hot.
