Taco Meatballs

Ingredients
2 pounds ground beef
1 Tablespoon garlic powder
1 Tablespoon chili powder
1 Tablespoon ground cumin
½ Tablespoon kosher salt
½ Tablespoon ground black pepper
1 small bag corn tortilla chips
1 small block pepper Jack cheese
1 small can dice jalapenos
4 eggs
Method
Preheat oven to 400 degrees F
In a bowl, combine the ground beef with the jalapenos, garlic, cumin, chili powder, salt, and pepper
Cut the pepper jack cheese into ½ inch cubes-set aside
Beat the eggs and set into a shallow pan
Crush the tortilla chips and place in another shallow pan
Make meatballs with the ground beef, adding a piece of the dice cheese into the center of each meatball. Place the meatballs on a baking tray
One by one, dip the meatballs into the egg mixture to cover thoroughly, then roll in the crushed tortilla chips, placing them back on the baking tray
When you finish dredging the meatballs, place them into the preheated oven for about 10-12 minutes to reach an internal temperature of 165 degrees F, and the cheese is melted inside
Serve with salsa and sour cream
