1 English cucumber, peeled
1 teaspoon kosher salt
1 Tablespoon minced garlic
1 teaspoon white vinegar
1 Tablespoon olive oil
2 cups Greek yogurt
¼ teaspoon black pepper
Pulse the cucumber in a food processor, add to a fine mesh strainer to drain the liquid.
In a large bowl, place the remaining ingredients and mix to combine
Add the drained cucumber and combine until well combined.
Refrigerate for 2 hours until well chilled.’
Serve with warm pita bread or vegetables, or use a as a dip for chips and crackers
