Beef and Hominy Casserole


  • 1-pound ground beef

  • 1-medium onion, small dice

  • 1-large clove garlic, minced

  • 1-small can diced chili peppers

  • 1-can diced tomatoes

  • 2-Tablespoons chili seasoning

  • 1-can white hominy

  • 1-cup sour cream

  • 4-cups cheddar cheese split

  • Salt and pepper as needed


  1. Pre-heat oven to 350 degrees F

  2. In a large skillet over medium heat, cook the ground beef with the onion, garlic, salt, and pepper

  3. When the beef is cooked and the onions are translucent, add the chili peppers and the diced tomatoes, juice, and all, and stir well

  4. Add the chili powder and more salt and pepper, stir well

  5. Drain the hominy and add to the skillet, and continue to stir

  6. Add the sour cream and half of the cheese and stir until completely blended

  7. Add the mixture to a casserole dish, top with the rest of the cheese

  8. Bake uncovered, in the oven for about 15-20 minutes

  9. Once the cheese is melted, pull from the oven, and let rest for about 10 minutes

  10. Serve with more sour cream and sliced green onions on top
