Braised leeks are a simple yet refined dish that brings out the vegetable’s gentle sweetness and tender texture. Leeks, part of the allium family, are slowly cooked in a small amount of liquid—such as broth or wine—often with aromatics like garlic or thyme. This technique softens the leeks and infuses them with subtle flavors, transforming them into a silky, flavorful side.












Braised Leeks

Ingredients

  • 3 medium sized leeks

  • ½ cup chicken stock

  • 4 Tablespoon butter

  • Salt and pepper to taste

  • Parmesan cheese for garnish


Method

  1. Wash and rinse the leeks and cut them length wise down the middle

  2. Heat a large skillet and melt the butter

  3. When the butter is melted, add the leeks to the pan, cut side down cook each leek for about 2-3 minutes on each side to develop color, seasoning with salt and pepper.

  4. After the leeks have been browned, add the chicken stock, cover the pan, and let braise for about 10 minutes

  5. Drain the braising liquid and reserve for later use

  6. Plate the braised leeks, add a bit of the stock over the top, sprinkle with salt and pepper, and a bit of the Parmesan cheese.
