Ground Beef Tetrazzini
Ingredients
1 ½ pounds ground beef
1 onion
1 red pepper
8 ounces sliced mushrooms
1 cup small curd cottage cheese
8 ounces of cream cheese
8 ounces of sour cream
1 can of tomato paste
8 ounces cooked spaghetti noodles
Salt and pepper to taste
Method
Brown ground beef in a large skillet.
Dice the onion and pepper and add to the beef as it cooks.
Add mushrooms as the meat continues to cook, and drain any accumulated fat.
Add the tomato paste and stir thoroughly when the beef is fully cooked. Add the cream cheese and cover the pan for 5 minutes to allow the cheese to soften.
Stir in cream cheese, cottage cheese, and sour cream. Blend well.
Add cooked and drained pasta and mix well. Add all the pans to a casserole dish and bake uncovered for ½ hour in a preheated 350-degree oven.
