Maakouda-Moroccan Potato Cakes
Ingredients
2 cups mashed potatoes
1 egg
2 teaspoons minced garlic
2 Tablespoons chopped parsley
½ teaspoon ground turmeric
½ teaspoon ground cumin
½ teaspoon coriander
Salt and pepper
1 cup all-purpose flour
Vegetable oil for frying
Method
Add the mashed potatoes to a large bowl. Add the egg, garlic, parsley, turmeric, cumin, coriander, salt, and pepper. Using your hands, mix well until everything is incorporated.
Place the flour in a small bowl.
Using a spoon or a scoop, take a portion of the potato mixture and form a ball. Then, flatten it slightly to resemble a patty. Dip each side in flour and set aside on a plate. Repeat this until all the potato mixture is used up.
Heat about an inch of oil in a large frying pan, at about 350 degrees, and then place as many potato patties as possible into the oil, being careful not to crowd the pan.
Cook for about 3-4 minutes, then flip the patties over with a pair of tongs and repeat the process until all the patties are cooked through.
Remove the patties from the hot oil and transfer them to a paper towel-lined plate to drain.
Serve warm as an appetizer, sandwich filling, or a side dish for tagine
