Maakouda-Moroccan Potato Cakes

Ingredients

  • 2 cups mashed potatoes

  • 1 egg

  • 2 teaspoons minced garlic

  • 2 Tablespoons chopped parsley

  • ½ teaspoon ground turmeric

  • ½ teaspoon ground cumin

  • ½ teaspoon coriander

  • Salt and pepper

  • 1 cup all-purpose flour

  • Vegetable oil for frying

Method

  1. Add the mashed potatoes to a large bowl. Add the egg, garlic, parsley, turmeric, cumin, coriander, salt, and pepper. Using your hands, mix well until everything is incorporated.

  2. Place the flour in a small bowl.

  3. Using a spoon or a scoop, take a portion of the potato mixture and form a ball. Then, flatten it slightly to resemble a patty. Dip each side in flour and set aside on a plate. Repeat this until all the potato mixture is used up.

  4. Heat about an inch of oil in a large frying pan, at about 350 degrees, and then place as many potato patties as possible into the oil, being careful not to crowd the pan.

  5. Cook for about 3-4 minutes, then flip the patties over with a pair of tongs and repeat the process until all the patties are cooked through.

  6. Remove the patties from the hot oil and transfer them to a paper towel-lined plate to drain.


Serve warm as an appetizer, sandwich filling, or a side dish for tagine
