Mapo Tofu

Mapo tofu is a popular Sichuan dish made with soft tofu in a spicy sauce containing chili paste, garlic, ginger, and ground meat. Known for its bold flavors and numbing spice from Sichuan peppercorns, it has a smooth texture and is often served over rice.
Mapo Tofu
Ingredients
1 Package of firm tofu
1 Tablespoon vegetable oil
¼ pound ground pork
1 ½ Tablespoons doubanjiang
1 Tablespoon minced garlic
2 teaspoons fresh grated ginger
1 cup chicken stock
2 Tablespoons soy sauce
1 Tablespoon cornstarch
1 Tablespoon water
Method
Place the oil in a wok or large skillet, and on medium-to-medium high heat, cook the ground pork.
While to pork is cooking, dice the tofu and set it in a small bowl
When the pork is fully cooked, add the doubanjiang and mix well
Add the garlic and ginger and continue to stir
Add the soy sauce and chicken stock and continue to stir
Make a slurry with the cornstarch and water, and add it to the mixture. Stir as it thickens.
Add the diced tofu, and incorporate it into the dish, gently tossing so as not to break it up.
Serve on rice or noodles, garnish with green onions
