Quick Pickled Radishes
Ingredients
2 limes for Juice
1 teaspoon white sugar
½ teaspoon kosher salt
½ teaspoon red pepper flakes
6 large radishes, trimmed and sliced thin
1 shallot, sliced thin
Method
Whisk lime juice, sugar, pepper flakes, and salt in a medium bowl until sugar and salt are dissolved.
Stir in sliced radishes and shallots and let sit for 15 minutes, or refrigerate for 1 hour.
Drain and serve on a salad or sandwiches, or use as a garnish
