Quick Pickled Radishes

Ingredients

  • 2 limes for Juice

  • 1 teaspoon white sugar

  • ½ teaspoon kosher salt

  • ½ teaspoon red pepper flakes

  • 6 large radishes, trimmed and sliced thin

  • 1 shallot, sliced thin

Method

  1. Whisk lime juice, sugar, pepper flakes, and salt in a medium bowl until sugar and salt are dissolved.

  2. Stir in sliced radishes and shallots and let sit for 15 minutes, or refrigerate for 1 hour.

  3. Drain and serve on a salad or sandwiches, or use as a garnish
