Potato pancakes are a delicious breakfast food. They are crispy, with a fluffy center, creating a great texture. You can top them with sour cream, chives, or applesauce.
Potato Pancakes
Ingredients
2 pounds of thawed hash browns
4 sliced green onions
9 eggs
1 cup seasoned flour
1 cup melted butter or margarine
Method
Mix ingredients in a bowl.
Using your hands, form flat patties and set them on a separate plate
When you have finished the patties, fry them on a lightly greased grill or frying pan until they are golden brown on each side
Serve with applesauce, butter, and syrup
Yields 32 individual patties
