Red Eye Gravy

Red-eye gravy is a Southern American sauce from pan drippings, black coffee, and ham. It is served over ham or biscuits and has a slightly bitter taste. Its name may come from its reddish appearance resembling bloodshot eyes.
Red Eye Gravy
Ingredients
2 Tablespoons bacon grease
2 Tablespoons A/P flour
¾ cup black coffee
¼ cup water
½ teaspoon brown sugar
1/8 teaspoon cayenne pepper
Salt and pepper to taste
Method
Over medium heat, in a large skillet, melt the bacon grease
Add the flour and mix to make a roux
Cook and stir the roux for about 1 minute, until it reaches a peanut butter consistency and no longer sticks to the pan.
Add the black coffee and continue to stir until the gravy begins to thicken.
Add the water, brown sugar, cayenne, salt, and pepper, and continue to stir until the ingredients are well incorporated.
Turn down the heat and simmer for 10 minutes.
