Red Eye Gravy


  • 2 Tablespoons bacon grease

  • 2 Tablespoons A/P flour

  • ¾ cup black coffee

  • ¼ cup water

  • ½ teaspoon brown sugar

  • 1/8 teaspoon cayenne pepper

  • Salt and pepper to taste


  1. Over medium heat, in a large skillet, melt the bacon grease

  2. Add the flour and mix to make a roux

  3. Cook and stir the roux for about 1 minute until the roux is a peanut butter consistency and does not stick to the pan

  4. Add the black coffee and continue to stir until the gravy begins to thicken

  5. Add the water, brown sugar, and cayenne, salt, and pepper, and continue to stir until ingredients are well incorporated

  6. Turn down heat and simmer for 10 minutes
