A roasted beet grain bowl is a vibrant and nutritious dish that combines the earthy sweetness of roasted beets with a variety of wholesome grains and fresh ingredients. The base typically consists of cooked grains, such as quinoa, farro, or brown rice, providing a hearty foundation.
Roasted Beet Grain Bowl
Ingredients
1 cup of cooked farro
1/2 cup balsamic vinaigrette dressing
1/2 cup of goat cheese crumbles
1/3 of a cup of sunflower seeds
3 cups of roasted fresh beets (about 4-6 medium-sized)
Olive oil (2-3 tablespoons)
Salt and Pepper to taste
Optional: fresh herbs
Method
Preheat your oven to 400°F (200°C).
Start by washing the beets thoroughly to remove dirt and debris.
Cut off the greens and roots, leaving about an inch of the stems to prevent bleeding.
Cut the beets into uniform sizes, about 1-inch cubes or wedges.
Place the beets in a large bowl and toss with olive oil, salt, and pepper.
Spread the seasoned beets on a baking sheet lined with parchment paper for easy cleanup.
Roast in the oven for 30-40 minutes, or until tender when pierced with a fork. You may want to stir them or turn them halfway through for even cooking.
Remove them from the oven and let them cool slightly.
Serve with your favorite grains as a base and top with sweet balsamic dressing and crumbled goat cheese.
