Western Omelet

Ingredients

  • ½ onion, diced

  • ½ red pepper, diced

  • 6 oz. ham, diced

  • 2 slices of cheese

  • 2 eggs

  • Oil or butter for cooking

  • Salt and pepper to taste


Method

  1. Dice the onion, red pepper, and ham into small pieces.

  2. In a non-stick skillet, heat a small amount of oil or butter over medium heat.

  3. Add the diced onion and red pepper to the skillet. Sauté for about 3-4 minutes until they soften.

  4. Stir in the diced ham and cook for an additional 2-3 minutes until it’s heated through.

  5. In a bowl, crack the 2 eggs and beat them with a fork or whisk. Season with salt and pepper to taste.

  6. Pour the beaten eggs over the sautéed mixture in the skillet. Reduce the heat to medium-low.

  7. Allow the eggs to cook undisturbed for about 2-3 minutes until the edges start to set.

  8. Place the slices of cheese on top of the omelet. Cover the skillet with a lid or a plate to help the cheese melt and the eggs finish cooking.

  9. Once the cheese has melted and the eggs are fully cooked (about 2 more minutes), gently fold the omelet in half.

  10. Slide the omelet onto a plate and serve hot. Enjoy your delicious western omelet!
